These 4-Ingredient Vegan Almond Butter Cups are surprisingly simple to make and so irresistible. They’re perfect to make for a healthier halloween treat.

You guys, I have a little confession: I can be a grinch. No, not just about Christmas, but literally about all holidays. About holidays, hoopla, shenagins, any tom foolery, really.

I came from a family of celebrators

It didn’t used to be this way. I used to embrace celebrations with the best of ‘em. In fact, my mom might be one of the most gung-ho, celebratory, bad asses of our time. You have a theme party? She’s dressing up. School spirit week (she’s a teacher) and she’ll outshine the entire student body. Once for a scholarship pageant I competed it, she made cut out mask of my face for my entire family to hold up. Yes. That actually happened. Oh and halloween? My mom is a creative costume goddess. Her talents especially sparkle when it comes to face painting. She could go pro.

So with all of this how did my grinch-ery develop? My hunch is that in college with the stress of mid terms and finals weeks in the fall semesters I never had time to really embrace and celebrate the seasons. Often I was up to my gills in papers and projects and work. Over time I began to resent the festivities and found myself frustrated that I couldn’t enjoy them. I had such an all or nothing attitude. So instead of celebrating when and where I could I decided to go grinch.

It’s too easy to be a hater

But I’ve slowly come to realize that being a hater is easy. It takes no effort to put something down or be a grinch. And in the end, you’re the only loser anyway. Meanwhile, the festive moms out their are happily reveling in the festivities.

Another thing I realized is that you can celebrate however you like. Holiday parties might not be your jam but gift giving and volunteering lights you up. Maybe you don’t have time to participate in every tradition, but you can still pick one or two really special ones. Or start a new one.

Moving forward I want to shed my grinch-ness. I want to dress up for halloween this year. I want eat the pumpkin spiced things. I want to make handmade cards for my friends (a favorite holiday activity). I want to make the time to spend with people I love. I want to be cheesy and enthusiastic and gung-ho just like my mom.

Let’s Talk about these almond butter cups

Oh and I definitely want to make these scrumptious almond butter cups. These bad boys are made with Enjoy Life Chocolate Chips some of my favorite dairy, soy, peanut free chocolate and Barney Butter almond butter. Gosh this stuff is the real deal. It’s made with blanched almonds which is great for a couple reasons. For people who are sensitive to the skin on the almond it’s much easier on your digestion. It also makes the almond butter so rich and smooth. If you love the texture of peanut butter, but the lighter sweeter taste of almond butter then you’re in for a wonderful surprise. You can find Barney Butter at Whole Foods, Stop & Shop, TJ Maxx, Marshalls and online.

These 4-Ingredient Vegan Almond Butter Cups are surprisingly simple to make and so irresistible. They’re perfect to make for a healthier halloween treat.

Ingredients
  • 2 Cups of Enjoy Life Chocolate Chips (or other vegan brand) (around 1¼ bags)
  • ½ Cup of Barney Butter Smooth Almond Butter
  • ½ Tablespoon of Maple Syrup
  • 1 Tablespoon of Almond Flour

Instructions
  1. To make the almond butter filling measure out ½ cup of Barney Butter almond butter in a medium sized microwave safe bowl
  2. Heat in microwave for 20 seconds, stirring and another 20 seconds until easy to stir. Add maple syrup and almond flour and stir until mixture turns into a soft dough texture
  3. For the chocolate:
  4. In a measuring cup measure out 2 cups of enjoy life chocolate chips (about 1 bag & ¼) and melt in microwave for 30 second increments, stopping to stir.
  5. When chocolate is completely melted, pour chocolate into each mold so it’s half full
  6. Roll almond butter filling into small patties and place into mold
  7. Fill to the top with remaining melted chocolate
  8. Allow to set in freezer for an hour
  9. – you can store in the fridge or freezer
