I can’t tell you how much I love the natural vibrant red color of beets. In terms of flavor, I think the sweetness of beets is quite boring. So the best way to enjoy beets is to add some tart flavor. This is how I grew to love beets and all sorts of citrus blended together to create that contrast flavor. After blending raw beets with some grapefruit and fresh lemon juice in coconut milk, you pretty much can enjoy it just as a smoothie if you’d like.

One important tip to making this smoothie type of base is to use a high-speed blender. It will make your grapefruit-beet base so smooth that you won’t find any beet chunks in it. After adding the oatmeal into the base and letting it stand in the refrigerator overnight, this citrus beet coconut overnight oats is almost ready to go. I also added some chia seeds and vegan pea protein powder to give it some extra fiber and protein.

- 1 cup full-fat coconut milk from a can
- 1 cup coconut milk from a carton package
- 2 tablespoons fresh lemon juice
- 1 small beet
- ½ large grapefruit, membrane removed
- 1 tablespoon chia seeds
- 14 grams protein powder (vegan if desired)
- ¼ teaspoon pure stevia extract powder
- ⅔ cup gluten-free quick cook oats
- 3 tablespoons blueberries
- 3 tablespoons raspberries
- 1 kiwi fruit
- 2 tablespoons unsweetened coconut flakes
- 2 teaspoons quick cook oats
- Blend coconut milk, lemon juice, beet, grapefruit, chia seeds, protein powder, and stevia powder in a high-speed blender until very smooth.
- Add oats into a large jar and pour the smoothie base into a large jar. Stir briefly to mix. Cover the jar with lid and let it stand in refrigerator overnight.
- Garnish with fruits and sprinkle with coconut flakes and oats if desired. Serve cold.
