We often forget to wear a hat, don’t get enough sleep or eat too much sugar, so a little extra immune support is very welcome during the colder months. These gummy candies provide protein for your diet and several immune-boosting herbs. They’re tasty too!
That’s like, 2 or 3 birds with 1 stone.
Actually, maybe 4 birds if you count the fact that they make an EXCELLENT addition to lunchboxes.
But why are we throwing stones at birds?
Let’s talk about the ingredients.
I got the idea to use blueberries while listening to a Dr. Aviva Romm podcast about building immunity. She specifically called out blueberries as a food to include in your diet – either frozen or fresh. (For this recipe I used frozen blueberries from Wyman’s of Maine.)
The next ingredient is elderberry syrup, known for its immune boosting properties. It’s great to take preventatively and also during sickness. You can buy elderberry syrup pre-made, or make your own. If you don’t want to use elderberry syrup, just use more blueberries.
We’ve got some lemon in there for Vitamin C and a flavor punch. Never hurts, right?
I use this gelatin. It’s from grass-fed beef. Gelatin is healing for the gut. Gut health = better immune function.
And finally (this part is optional) I’ve found these gummies to be an excellent vehicle for immune-boosting herbal extracts like echinacea, andrographis, reishi and/or astragalus. On their own, herbal tinctures taste horrible. But I’ve added 12 drops to this recipe and the taste is undetectable.
You will need:
Measuring cups and spoons
A silicone candy mold like this
- 1 cup frozen blueberries, defrosted
- 3 Tbsp. elderberry syrup
- Juice of 1 lemon
- ½ cup raw honey
- ½ cup + 1 Tbsp. gelatin
- Optional: 12 drops herbal extract of choice
- In a blender, combine blueberries, elderberry syrup and lemon juice. Transfer to a pot over low heat.
- Add honey and whisk to combine.
- Slowly sprinkle in gelatin, whisking the entire time to avoid lumps. You’ll still get some small lumps and that’s ok. Mine was pretty lumpy but it all worked out.
- Remove from heat and stir in herbal extract, if using.
- Spoon into candy molds and refrigerate for 30 minutes to set.
- Store in the refrigerator. Candies will also hold their shape at average room temperature.
