I've you've never had a garden where the amount of produce suddenly spins out of control you may not understand the quest to search for new ways to use up garden veggies like cucumbers, squash, and tomatoes. It seems like every summer I add at least one or two new recipes to my collection for these summer vegetables. So when I make a cucumber salad over and over you know it's really a winner, and when Kara and I made it recently to take these new photos we loved it. I hope you'll remember this salad when you have cucumbers coming out of your ears later this summer.
I don't mind the slightly brown color from the balsamic vinegar, but you could use white balsamic vinegar if you have some. I sweetened the dressing with Monkfruit Sweetener, and used my fresh-frozen lemon juice. And, since cucumbers are one of The World's Healthiest Foods and everything here is super low in carbs (balsamic vinegar has some carbs, but the amount per serving is minimal), you can eat this as often as you'd like!
